Chocolate Banana Bread

Ingredients

½ cup margarine, softened
½ cup Splenda
½ cup sugar
2 eggs
1 cup mashed ripe bananas (about 2 medium)
¼ cup skim milk
1 teaspoon vanilla
2 cups flour
¼ cup cocoa
1 teaspoon baking soda
½ teaspoon salt
¼ cup finely chopped nuts

Directions:

  1. Preheat oven to 350°.
  2. Mix together margarine and sugars very thoroughly.
  3. Add eggs, bananas, milk, and vanilla; stir well.
  4. Add rest of ingredients and mix until just barely combined.
  5. Pour batter into a greased 8½ x 4½ inch loaf pan.
  6. Bake at 350° for 55 minutes or until toothpick inserted near center comes out clean.
  7. Cool 10 minutes before removing from pan; cool completely before wrapping for storage.
