Marinated Carrots
    1. Place sliced carrots in a sauce pan with enough water to just cover the carrots. Bring to a boil and turn down to simmer for about 5 minutes or until slightly tender.
    2. Drain carrots and add chopped onion and green pepper to the sauce pan.
    3. Blend remaining ingredients and pour over carrot mixture.
    4. Continue to simmer for an additional 5 to 10 minutes until vegetables are tender and flavors are blended.
