ROASTED SWEET POTATOES AND ONIONS

Ingredients

  • 3 cups cubed sweet potatoes, 1 very large or 2 medium potatoes
  • 1 cup cubed onion, about 1 large
  • Cooking spray
  • Thyme
  • Salt
  • Pepper

Directions

  1. Preheat oven to 450°. Spray cookie sheet with cooking spray.
  2. Spread vegetable cubes in 1 layer on a cookie sheet. Spray vegetables with cooking spray.
  3. Sprinkle with seasonings. Back for 20, turn vegetables, bake another 20 minutes.
