Beet Greens and Romaine Salad

Ingredients
  • 4 beet green leaves
  • 2 large leaves of romaine lettuce
  • 1/2 teaspoon oil
  • 1/2 teaspoon flavored vinegar (such as red wine or balsamic vinegar)
  • 1/8 teaspoon ground black pepper

 

Directions
  1. Wash hands with soap and water. 
  2. Wash beet greens and romaine lettuce. Cut or tear into bite-sized pieces. Dry with a salad spinner, paper towel, or clean dish towel.
  3. In a small bowl, combine oil, vinegar, and black pepper. Pour over salad and serve immediately.
  • Variations: Combine beet greens with other lettuces and top with sliced vegetables, such as radishes, bell peppers, or cucumbers.
