Quelites (Sauteed Greens or Spinach)
  1. Heat oil in a medium frying pan.
  2. Sauté onion in oil.
  3. Add spinach and chile piquin. Cook over medium heat for about 8 minutes.
  4. Note: This recipe is also delicious when prepared with 1 cup of pinto beans. The beans add about 7 grams of carbohydrate per ½ cup serving.
