Pumped-up Salmon Patties

Olive Oil Pam spray
1 large envelope salmon
1 egg
½ c firm tofu
2 T mustard
Lettuce leaves or salad
2-3 T non-fat dry milk
6 saltine crackers

Put all ingredients (except Pam and lettuce) in bowl, mix until you can form a patty that holds together.  Form into 4 patties.  After a light spray of the olive oil spray, pan sear the patties on both sides until browned.  Remove and place on bed of lettuce.  Serves two
