Rozzie’s Noodle Kugel

(Great for brunch or pot-luck)

16 oz fine noodles
8 oz lite sour cream
8 oz lite cream cheese
1 pkg low-fat cottage cheese
4 eggs, separated
1 Cup unsweetened applesauce
½ Cup white seedless grapes
2 tsp cinnamon
½ Cup sugar for noodle mixture
¼ Cup sugar for cinnamon mixture
4 Tbs butter or margarine, melted

Mix beaten egg yolks with cheeses, sour cream, applesauce, ½ Cup sugar and melted butter or margarine.
Add noodles which have been cooked in salted water, according to package directions, and drained.
Add raisins. Fold in stiffly beaten egg whites. Mix ¼ cup sugar and cinnamon. Grease 9 x 13 “ pan and sprinkle bottom with half of cinnamon/sugar mixture. Put noodle mixture in pan. Sprinkle top with rest of sugar/cinnamon mix. Bake at 350 degreed for about 1 hour.
Serves 8.
