Unforgettable Chocolate Cake Extreme

2 ½ c flour
½ c cocoa powder
1 T baking powder
1 T baking soda
1 tsp salt
½ c sugar
½ c brown sugar
1 c silky tofu
3 T non-fat dry milk
1 C soy milk
½ c applesauce
¼ c honey
2 tsp vanilla
¾ c chocolate chips, divided

Preheat oven to 350oF.  Use either two-9” pans or one 8 x 11-in pan.  Spray with cooking spray and lightly dust with flour.  Blend dry ingredients with wire whisk.  In blender, combine tofu, milk, applesauce, honey, and vanilla and process until smooth.  Add ½ c melted chocolate chips until smooth again.  Pour liquid and remaining chocolate chips into dry bowl and stir until combined.  Bake 20-25 minutes or until toothpick comes out clean.  Remove and let cool at least 20 minutes.  Carefully release from pan.

12 oz pkg extra firm silken tofu (1 ½ c)
1 ½ c honey
2 tsp vanilla
1 ½ c chocolate chips, melted

Put tofu in blender and blend until completely smooth.  Add the melted chips and honey, blend until smooth.  Transfer to storage container with lid and refrigerate for at least four hours or overnight before using.
Serves 12-15.
