Green Eggs and Ham Cups

3 eggs
1 T all-purpose flour
2 T butter, melted
1 c reduced-fat cottage cheese
1 ½ c shredded sharp cheddar cheese
1/8 tsp hot sauce, to taste
1 c spinach leaves, loosely packed
8 thin ham slices

Preheat oven to 350oF.  Grease 8 muffin tins or 4-oz ramekins.  Combine eggs, flour, butter, cottage cheese, cheddar cheese, and hot sauce in food processor or blender.  Process until well blended.  Add spinach and pulse briefly.  Do not over-process; green flecks should be visible.

Line muffin tins with ham slices, pressing down with finger tips.  Pour about 1/3 c egg mixture into each tin.  Bake 20-25 minutes or until toothpick inserted into center comes out clean. 
Serves 8.
