Watermelon and Orzo Salad

Ingredients

1 cup dry orzo pasta (whole-wheat if available)
1 cup cubed watermelon
½ cup cubed cucumber
¼ cup crumbled feta cheese
2 Tbsp lemon juice
2 Tbsp oil
1 tsp honey
½ tsp ground black pepper

Directions
  1. Wash hands with soap and water.
  2. Cook pasta as directed on package. Once cooked, drain water from pasta into colander. Rinse under cold water. Set aside to drain.
  3. Wash produce under cold water and prepare as directed in Ingredients.
  4. Add cooked orzo, watermelon, cucumber, and feta to a large bowl.
  5. In a small bowl, combine lemon juice, oil, honey, and black pepper with a whisk or fork. Pour dressing over orzo mixture and toss to coat.
  6. Eat immediately or refrigerate until ready to serve. Eat within 4 days.
