Ingredients
1 cup dry orzo pasta (whole-wheat if available)
1 cup cubed watermelon
½ cup cubed cucumber
¼ cup crumbled feta cheese
2 Tbsp lemon juice
2 Tbsp oil
1 tsp honey
½ tsp ground black pepper
Directions
- Wash hands with soap and water.
- Cook pasta as directed on package. Once cooked, drain water from pasta into colander. Rinse under cold water. Set aside to drain.
- Wash produce under cold water and prepare as directed in Ingredients.
- Add cooked orzo, watermelon, cucumber, and feta to a large bowl.
- In a small bowl, combine lemon juice, oil, honey, and black pepper with a whisk or fork. Pour dressing over orzo mixture and toss to coat.
- Eat immediately or refrigerate until ready to serve. Eat within 4 days.
