Chocolate Chip Cookie Bar

Ingredients
  • 3 Tablespoons unsalted butter
  • 3 Tablespoons neutral oil (canola, vegetable, safflower)
  • 1/4 cup granulated white sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 Tablespoon honey
  • 1/2 cup + 3 Tablespoons all-purpose flour
  • 1/2 cup + 3 Tablespoons whole wheat flour (or more all-purpose flour)
  • Half (12-ounce package) chocolate chips (60% cocoa or semisweet)
Directions
  1. Wash hands with soap and water. Add butter to a large mixing bowl. Set at room temperature for 30 minutes, until butter is softened.
  2. Preheat oven 375°F. Set out an 11x7 baking dish.
  3. With an electric hand mixer, blend butter until smooth. Add oil and blend with mixer until oil is well combined. 
  4. Add sugars, baking soda, and salt. Cream for 2 minutes, scraping down sides of bowl with a spatula as needed.
  5. Add egg and honey; blend to combine. Wash hands with soap and water after handling eggs.
  6. By hand with a spoon, mix in flours and chocolate chips until flours are incorporated.
  7. Press dough into ungreased baking dishpan. Bake in preheated oven for 15-18 minutes or until toothpick comes out clean.
  8. Cool completely before cutting. 
  • Storage: Cover baking dish with lid and store at room temperature for up to one week. To freeze, wrap individual bars in freezer paper and place in a ziptop freezer bag. Thaw in refrigerator or at room temperature before eating.
