Ingredients
- 3 Tablespoons unsalted butter
- 3 Tablespoons neutral oil (canola, vegetable, safflower)
- 1/4 cup granulated white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1 Tablespoon honey
- 1/2 cup + 3 Tablespoons all-purpose flour
- 1/2 cup + 3 Tablespoons whole wheat flour (or more all-purpose flour)
- Half (12-ounce package) chocolate chips (60% cocoa or semisweet)
Directions
- Wash hands with soap and water. Add butter to a large mixing bowl. Set at room temperature for 30 minutes, until butter is softened.
- Preheat oven 375°F. Set out an 11x7 baking dish.
- With an electric hand mixer, blend butter until smooth. Add oil and blend with mixer until oil is well combined.
- Add sugars, baking soda, and salt. Cream for 2 minutes, scraping down sides of bowl with a spatula as needed.
- Add egg and honey; blend to combine. Wash hands with soap and water after handling eggs.
- By hand with a spoon, mix in flours and chocolate chips until flours are incorporated.
- Press dough into ungreased baking dishpan. Bake in preheated oven for 15-18 minutes or until toothpick comes out clean.
- Cool completely before cutting.
- Storage: Cover baking dish with lid and store at room temperature for up to one week. To freeze, wrap individual bars in freezer paper and place in a ziptop freezer bag. Thaw in refrigerator or at room temperature before eating.
