Bruschetta

Ingredients
  • 2 fresh tomatoes (medium), diced
  • 2 TBSP fresh basil, diced
  • 2 TBSP grated parmesan cheese
  • 1 clove fresh garlic, minced
  • 1 ½ tsp balsamic vinegar
  • 1 tsp olive oil
  • Salt and pepper to taste (start with 1/8 tsp of each)
Directions
  1. Mix together tomatoes, basil, parmesan, and fresh garlic. 
  2. Add vinegar and oil and mix well. 
  3. Add salt and pepper and mix well. 
  4. Set out at room temperature to allow flavors to develop for up to 1 hour, then serve.

TIP: Try it with crostinis (sliced oven-toasted bread)! Brush thin slices of baguette with olive oil. Sprinkle with a little grated parmesan cheese and granulated garlic if desired. Toast in the oven at 375 °F until lightly browned and crisp, about 5-8 minutes.

Exchange: 4 thin baguette slices (1 oz total) brushed with 1 tsp of olive oil is an extra 1 starch + 1 fat and adds 125 calories per serving.
