Ingredients
- 2 fresh tomatoes (medium), diced
- 2 TBSP fresh basil, diced
- 2 TBSP grated parmesan cheese
- 1 clove fresh garlic, minced
- 1 ½ tsp balsamic vinegar
- 1 tsp olive oil
- Salt and pepper to taste (start with 1/8 tsp of each)
Directions
- Mix together tomatoes, basil, parmesan, and fresh garlic.
- Add vinegar and oil and mix well.
- Add salt and pepper and mix well.
- Set out at room temperature to allow flavors to develop for up to 1 hour, then serve.
TIP: Try it with crostinis (sliced oven-toasted bread)! Brush thin slices of baguette with olive oil. Sprinkle with a little grated parmesan cheese and granulated garlic if desired. Toast in the oven at 375 °F until lightly browned and crisp, about 5-8 minutes.
Exchange: 4 thin baguette slices (1 oz total) brushed with 1 tsp of olive oil is an extra 1 starch + 1 fat and adds 125 calories per serving.
