Carrot, Almond, Raisin Salad

Ingredients
  • 2 cups shredded carrots
  • 1/3 cup golden raisins
  • 1/3 cup slivered almonds
  • 1 tablespoon oil
  • 2 tablespoons unsweetened orange juice
  • 1 teaspoon Dijon mustard
Directions
  1. If carrots are purchased as shredded, chop slightly if pieces are long. Add carrots, raisins, and almonds to bowl.
  2. In a separate bowl, whisk oil, orange juice and mustard. Add to carrot mixture and toss.
