Ingredients
- 10 ounces of chicken, cooked and sliced thin (or canned chicken, drained)
- 8 thin slices of cucumber
- 8 thin slices cantaloupe
- 8 leaves of lettuce (any type)
- 1/4 cup light mayonnaise (Tip 1)
- 8 slices bread (whole-grain preferred)
Directions
- Wash hands with soap and water.
- Wash produce under cold water. Cut as described in Ingredients.
- Spread mayo evenly over 4 slices of bread.
- Layer chicken, cucumber, cantaloupe, and lettuce over bread slices. Top with remaining bread.
Tip 1: For a variation, mash half an avocado or use a few tablespoons of hummus in place of the mayonnaise. Or stir in fresh or dried herbs into mayo for extra flavor.
Enjoy this sandwich with a side of yogurt topped with nuts and granola.
