Fiesta Salsa

Ingredients
  • 1 cup grape tomatoes, quartered
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup fresh or frozen corn kernels
  • 4 scallions, minced (white and green parts)
  • ½ cup chopped fresh mozzarella cheese
  • 1 medium-size chile, seeded and diced
  • 2 tablespoons lime juice
  • Salt and pepper to taste
Directions
  • Mix together all the ingredients in a large bowl.
  • Serve immediately, or store in the refrigerator for up to 3 days.
