Leafy Green Salad with Garbanzo Beans

Ingredients
  • 6 cups of Romaine lettuce, torn into bite sized pieces (or 1 8 ounce bag of your favorite lettuce blend)
  • 2 Roma tomatoes, diced
  • 1 medium red bell pepper, diced
  • 1 medium cucumber, sliced
  • 3 green onions, sliced
  • ½ cup reduced sodium garbanzo beans, drained and rinsed
  • 2 hard-cooked eggs, chopped


Lemony Vinaigrette

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 clove of garlic, minced
  • ¼ teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
Directions
  1. Prepare dressing by combining all ingredients in a tightly covered container and shake until well blended.
  2. Mix lettuce leaves and next five ingredients in a large bowl. Top with chopped eggs.
  3. Pour vinaigrette over salad greens and toss well.
