Ingredients
- 6 cups of Romaine lettuce, torn into bite sized pieces (or 1 8 ounce bag of your favorite lettuce blend)
- 2 Roma tomatoes, diced
- 1 medium red bell pepper, diced
- 1 medium cucumber, sliced
- 3 green onions, sliced
- ½ cup reduced sodium garbanzo beans, drained and rinsed
- 2 hard-cooked eggs, chopped
Lemony Vinaigrette
- ½ cup olive oil
- ¼ cup red wine vinegar
- 2 tablespoons fresh lemon juice
- 1 clove of garlic, minced
- ¼ teaspoon Italian seasoning
- ¾ teaspoon salt
- ¼ teaspoon black pepper
Directions
- Prepare dressing by combining all ingredients in a tightly covered container and shake until well blended.
- Mix lettuce leaves and next five ingredients in a large bowl. Top with chopped eggs.
- Pour vinaigrette over salad greens and toss well.
