Lime Pie

Ingredients
  • 3 eggs, separated
  • 1 cup milk
  • ½ cup fresh lime juice
  • ½ cup granulated sugar
  • ½ cup Splenda
  • ¼ cup flour
  • ¼ teaspoon salt
  • Pastry for 9-inch single crust pie
  • Fat-free whipped topping
  • Lime slices for garnish
Directions
  • Beat eggs whites in large mixing bowl until stiff peaks form; set aside.
  • In small bowl beat egg yolks; add milk and lime juice. Add sugar, flour and salt; beat until smooth.
  • Fold lime mixture into egg whites. Pour into pastry-lined pie plate.
  • Bake at 350°F for 35 to 40 minutes or until golden brown (surface may crack).
  • Garnish with fat-free whipped topping and twisted lime slices.
