Ingredients
- ¾ cup whole wheat flour
- ¾ cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1½ cups old-fashioned rolled oats
- 1 cup any combination of chopped nuts, raisins and dates
- 6 ounces silken (soft) tofu
- ½ cup extra virgin olive oil
- ¼ cup water
- 1 cup light brown sugar, packed
- 2 tablespoons vanilla extract
Directions
- Preheat oven to 375ºF.
- In a large bowl, sift together the flours, baking powder and spices. Stir in oats and the fruit/nut mixture.
- In a separate bowl, mash tofu with back of a fork. Stir in olive oil, water, brown sugar and vanilla extract.
- Using a rubber spatula, fold wet ingredients into the dry ones, combining thoroughly.
- Drop batter by rounded tablespoon onto ungreased cookie sheet. Bake for 10 minutes, or until edges are golden brown.
