Pineapple Whipped Salad

Ingredients

1 package (3-ounce) sugar-free lime gelatin
1 cup boiling water
1 can (20-ounce) crushed pineapple in its own juice
½ cup low-fat cottage cheese
1 cup non-fat whipped topping

Directions
  1. Dissolve gelatin in boiling water.
  2. Drain pineapple, reserving ½ cup. Add this ½ cup of pineapple juice to gelatin.
  3. Chill until very thick.
  4. Fold in pineapple, cottage cheese, and whipped topping. Chill until firm.
