Pumpkin Chili with Canned Pumpkin

Ingredients
  • 1 pounds of lean ground beef
  • 1/2 cup chopped onion
  • 1 clove minced garlic
  • 1 can 100% pumpkin puree
  • 1 can crushed tomatoes
  • 1 cup water
  • 1 can kidney beans
  • 1 Tablespoon Chili powder
  • 1/2 Tablespoon Cumin
  • Shredded cheese
  • Sour cream
Directions
  1. Add 1 pounds of lean ground beef, 1/2 cup chopped onion, and 1 clove minced garlic to a large saucepan.
  2. Cook until meat is brown and onion is soft.
  3. Drain excess fat.
  4. Add 1 can 100% pumpkin puree, 1 can crushed tomatoes, 1 cup water,1 can kidney beans (drained) to pan. (1 can = 15 ounces)
  5. Add 1 Tablespoon Chili powder and 1/2 Tablespoon Cumin to pan.
  6. Stir.
  7. Bring to a boil. Reduce heat and cover
  8. Simmer for 30 minutes, stirring occasionally
  9. Top with cheese and sour cream, if desired, and serve
