Ingredients
- 1½ teaspoons olive oil
- ½ cup chopped onion
- 1 package (10 ounces) frozen spinach
- 1 teaspoon crushed chile piquin
Directions
- Heat oil in a medium frying pan.
- Sauté onion in oil.
- Add spinach and chile piquin. Cook over medium heat for about 8 minutes.
Note: This recipe is also delicious when prepared with 1 cup of pinto beans. The beans add about 7 grams of carbohydrate per ½ cup serving.
