Quelites (Sauteed Greens or Spinach)

Ingredients
  • 1½ teaspoons olive oil
  • ½ cup chopped onion
  • 1 package (10 ounces) frozen spinach
  • 1 teaspoon crushed chile piquin
Directions
  • Heat oil in a medium frying pan.
  • Sauté onion in oil.
  • Add spinach and chile piquin. Cook over medium heat for about 8 minutes.

Note: This recipe is also delicious when prepared with 1 cup of pinto beans. The beans add about 7 grams of carbohydrate per ½ cup serving.
