Spinach Stuffed Turkey Meatloaf

Ingredients
  • 1 tablespoon olive oil
  • 1 pound 93% fat free ground turkey
  • 1/2 teaspoon ground thyme
  • 5 ounces fresh baby spinach
  • 1 cup onion, chopped
  • 1 teaspoon fresh garlic, minced
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 egg
  • ¼ cup whole wheat bread crumbs

Meatloaf Topping
  • 2 tablespoons brown sugar
  • 1 teaspoon dry mustard
  • ¼ cup ketchup
  • ¼ teaspoon nutmeg
Directions
  1. Preheat oven to 350 °F.
  2. Spray a 5 x 8 ½ inch loaf pan with cooking spray.
  3. Heat olive oil in a medium skillet. Sauté onions for about 5 minutes or until a light golden color. Add garlic and continue stirring another minute. Transfer to a bowl.
  4. Add spinach to skillet and stir about 3 minutes or until spinach is wilted. Set aside.
  5. In a large bowl add ground turkey, salt, pepper, thyme, Worcestershire sauce, 1 tablespoon ketchup, egg, and bread crumbs. Mix well.
  6. Press turkey mixture onto plastic wrap in the shape of a rectangle. Spread spinach and onion mixture over the top of the ground turkey.
  7. Use plastic wrap and roll turkey and spinach mixture up into a loaf shape. Place seam down in loaf pan.
  8. Mix all topping ingredients together and set aside.
  9. Bake at 350 ° F for 1 hour or until internal temperature reaches 165 ° F. Spread topping evenly over turkey loaf during the last 20 minutes of baking.
  10. Remove from oven, cover and let rest about 10 minutes.
