Tofu Chocolate Pudding

Ingredients
  • 1 cup semisweet chocolate chips
  • 2 tablespoons water
  • 16 oz soft silken tofu, drained
  • ¼ cup soy or skim milk
  • 1 tablespoon vanilla extract
  • Directions
  • Melt chocolate in microwave, on medium or high for 5-10 seconds at a time.
  • Stir between each heating, repeating until melted.
  • In blender or food processor, combine tofu with melted chocolate, milk, and vanilla extract.
  • Process until mixture is smooth.
  • Chill for one hour in 6 serving dishes.
  • Top with fruit or nuts.
