Unforgettable Chocolate Cake Extreme

2 ½ cups flour ½ cup cocoa powder 1 tablespoon baking powder 1 tablespoon baking soda 1 teaspoon salt ½ cup sugar ½ cup brown sugar 1 cup silky tofu 3 tablespoon non-fat dry milk 1 cup soy milk ½ cup applesauce ¼ cup honey 2 teaspoons vanilla ¾ cup chocolate chips, divided Frosting
12 oz package extra firm silken tofu (1 ½ c) 1 ½ cups honey 2 teaspoons vanilla 1 ½ cups chocolate chips, melted
Directions
Preheat oven to 350°F. Use either two-9” pans or one 8 x 11-in pan. Spray with cooking spray and lightly dust with flour. Blend dry ingredients with wire whisk. In blender, combine tofu, milk, applesauce, honey, and vanilla and process until smooth. Add ½ cup melted chocolate chips until smooth again. Pour liquid and remaining chocolate chips into dry bowl and stir until combined. Bake 20-25 minutes or until toothpick comes out clean. Remove and let cool at least 20 minutes. Carefully release from pan. Frosting:
Put tofu in blender and blend until completely smooth. Add the melted chips and honey, blend until smooth. Transfer to storage container with lid and refrigerate for at least four hours or overnight before using.
