Ingredients

- 2 tsp salt
- 1 Tbsp ground coriander
- 2 tsp cumin
- ½ Tbsp cinnamon
- 1 tsp allspice
- ½ tsp cayenne pepper
- ½ tsp ginger
- ½ tsp black pepper
- 2 TBSP plain lowfat yogurt (optional)

- 6 TBSP onion, grated
- 8 cloves fresh garlic, minced
- 6 TBSP fresh parsley, chopped
- 2 lb ground beef, 90% lean
Directions
- If using bamboo skewers, allow them to soak in warm water for at least 30 minutes.
- Mix together all dry spices (from STEP 2). Mix into yogurt, if using, and let it rest on the counter while you prepare the ingredients for STEP 3.
- Place ground beef in a large bowl. Add garlic, onion, parsley, and spice mixture. Use your hands to thoroughly mix the ingredients.
- Divide the meat mixture into 16 roughly equal parts. Form each part into a log shape and place on a skewer (if using skewers).
- Place raw kebabs in the fridge, covered, and let them rest for at least 30 minutes. They may be refrigerated for up to 1 day before cooking.
- Cook kebabs on a grill until cooked through (internal temperature of 165 °F). Alternatively, cook in the oven at 375 °F for 15-20 minutes, or until cooked through.
Tip: Try with homemade tzatziki sauce!
