All-Beef Kofta Kebabs

Ingredients

Special ingredients: fresh garlic, fresh parsley, coriander, allspice, ginger

Special equipment: cheese grater, skewers (optional), grill (optional)

  • 16 skewers (optional)

  • 2 tsp salt
  • 1 Tbsp ground coriander
  • 2 tsp cumin
  • ½ Tbsp cinnamon
  • 1 tsp allspice
  • ½ tsp cayenne pepper
  • ½ tsp ginger
  • ½ tsp black pepper
  • 2 TBSP plain lowfat yogurt (optional)

  • 6 TBSP onion, grated
  • 8 cloves fresh garlic, minced
  • 6 TBSP fresh parsley, chopped
  • 2 lb ground beef, 90% lean
Directions
  1. If using bamboo skewers, allow them to soak in warm water for at least 30 minutes.
  2. Mix together all dry spices (from STEP 2). Mix into yogurt, if using, and let it rest on the counter while you prepare the ingredients for STEP 3.
  3. Place ground beef in a large bowl. Add garlic, onion, parsley, and spice mixture. Use your hands to thoroughly mix the ingredients.
  4. Divide the meat mixture into 16 roughly equal parts. Form each part into a log shape and place on a skewer (if using skewers).
  5. Place raw kebabs in the fridge, covered, and let them rest for at least 30 minutes. They may be refrigerated for up to 1 day before cooking.
  6. Cook kebabs on a grill until cooked through (internal temperature of 165 °F). Alternatively, cook in the oven at 375 °F for 15-20 minutes, or until cooked through.

 

Tip: Try with homemade tzatziki sauce!
