Ingredients
- 2 teaspoons olive oil
- 1 clove garlic, minced
- 1½ pounds fresh or frozen sugar snap peas, trimmed
- 1 cup chopped sweet yellow pepper
- 1/3 cup chopped fresh basil
- ½ teaspoon sugar
- ½ teaspoon grated lemon rind
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons fresh lemon juice
Directions
- Heat oil in a large nonstick skillet over medium-high heat.
- Add garlic and sauté 30 seconds.
- Add peas and yellow pepper. Sauté 2 to 3 minutes or until peas (or beans) are crisp-tender.
- Add basil, sugar, lemon rind, salt and pepper. Sauté 30 seconds.
- Add lemon juice and sauté 30 seconds. Serve immediately.
