Ingredients
- ½ cup margarine, softened
- ½ cup Splenda
- ½ cup of sugar
- 2 eggs
- 1 cup mashed ripe bananas (about 2 medium)
- ¼ cup skim milk
- 1 teaspoon vanilla
- 2 cups flour
- ¼ cup of cocoa
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup finely chopped nuts
Directions
- Preheat oven to 350°.
- Mix together margarine and sugars very thoroughly.
- Add eggs, bananas, milk, and vanilla; stir well.
- Add rest of ingredients and mix until just barely combined.
- Pour batter into a greased 8½ x 4½ inch loaf pan.
- Bake at 350° for 55 minutes or until toothpick inserted near center comes out clean.
- Cool 10 minutes before removing from pan; cool completely before wrapping for storage.
