Ingredients
- 1 pound fresh green beans with ends snipped off and washed
- 1 tablespoon trans- fat free margarine
- 1 medium yellow onion, sliced very thin
- ½ cup reduced sodium vegetable or chicken broth
- 1½ teaspoons red wine vinegar
- 1 teaspoon sugar
- ¼ teaspoon salt
- Black pepper to taste
Directions
- Place green beans in a medium sauce pan with about 1 cup of water. Bring water to a boil; cover and simmer for about 5 minutes or until beans crisp but tender. Drain beans and immerse in ice cold water to stop cooking process. Drain beans and set aside.
- Melt margarine in a skillet over medium heat. Add onions, stirring frequently for about 15 minutes until onion are tender and a golden caramel color.
- Combine vinegar, sugar and broth and pour into skillet with caramelized onions. Simmer and stir until liquid is slightly reduced.
- Add green beans and sauté one or two minutes until green beans are heated through.
