Green Bean and Caramelized Onion Sauté

Ingredients
  • 1 pound fresh green beans with ends snipped off and washed
  • 1 tablespoon trans- fat free margarine
  • 1 medium yellow onion, sliced very thin
  • ½ cup reduced sodium vegetable or chicken broth
  • 1½ teaspoons red wine vinegar
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • Black pepper to taste
Directions
  1. Place green beans in a medium sauce pan with about 1 cup of water. Bring water to a boil; cover and simmer for about 5 minutes or until beans crisp but tender. Drain beans and immerse in ice cold water to stop cooking process. Drain beans and set aside.
  2. Melt margarine in a skillet over medium heat. Add onions, stirring frequently for about 15 minutes until onion are tender and a golden caramel color.
  3. Combine vinegar, sugar and broth and pour into skillet with caramelized onions. Simmer and stir until liquid is slightly reduced.
  4. Add green beans and sauté one or two minutes until green beans are heated through.
