Ingredients
- ½ cup evaporated milk
- 1 tablespoon extra-virgin olive oil
- ½ cup crumbled feta cheese
- ½ cup fresh cilantro leaves
- 2 tablespoons lime juice
- Salt and freshly ground pepper
- 12 ounces rotini pasta, cooked according to package directions
- 1 cup finely diced ham
- 2 cups chopped bell pepper
- ½ cup frozen peas, thawed
- ½ cup red onion, finely chopped
Directions
- Combine the evaporated milk, olive oil, feta, cilantro, lime juice, and some salt and pepper in a blender and purée until smooth and creamy. Set aside.
- Add the ham, bell peppers, peas, and red onion to the drained pasta. Pour the dressing over the pasta and gently mix it into the salad.
