Ingredients
  • ½ cup evaporated milk
  • 1 tablespoon extra-virgin olive oil
  • ½ cup crumbled feta cheese
  • ½ cup fresh cilantro leaves
  • 2 tablespoons lime juice
  • Salt and freshly ground pepper
  • 12 ounces rotini pasta, cooked according to package directions
  • 1 cup finely diced ham
  • 2 cups chopped bell pepper
  • ½ cup frozen peas, thawed
  • ½ cup red onion, finely chopped
Directions
  • Combine the evaporated milk, olive oil, feta, cilantro, lime juice, and some salt and pepper in a blender and purée until smooth and creamy. Set aside.
  • Add the ham, bell peppers, peas, and red onion to the drained pasta. Pour the dressing over the pasta and gently mix it into the salad.
