Pizza Chicken

Ingredients
  • 12 oz chicken breast (fileted, thin-sliced, or pounded flat), cut in half
  • ½ c tomato pasta sauce
  • ½ c shredded low-fat mozzarella cheese
  • ½ tsp dried basil
  • ¼ tsp granulated garlic

OPTIONAL - add additional pizza toppings: ¼ c pre-cooked vegetables (peppers, onions, mushrooms, olives, pineapple, etc.) or 2 oz pre-cooked meat (turkey pepperoni, turkey sausage, lean ham, etc.). Note: these are not included in the listed nutrition facts.

Directions
  1. Preheat oven to 375 °F.
  2. If necessary, filet or pound chicken so it is flat and large, like a mini pizza crust.
  3. Cut chicken breast in half to make two personal “pizzas”.
  4. Line a baking sheet with foil (sprayed with nonstick pan spray) or parchment paper. Lay chicken flat on a baking sheet and sprinkle with basil and garlic. Bake in preheated oven until fully cooked (chicken reaches 165 °F interval temperature), about 20-35 minutes.
  5. Remove the baking sheet from the oven. Spread tomato sauce over the top of the chicken. Add toppings, if using. Top with mozzarella cheese.
  6. Return chicken to the oven to melt the cheese (about 3-5 minutes), then serve.
