Ingredients
- 12 oz chicken breast (fileted, thin-sliced, or pounded flat), cut in half
- ½ c tomato pasta sauce
- ½ c shredded low-fat mozzarella cheese
- ½ tsp dried basil
- ¼ tsp granulated garlic
OPTIONAL - add additional pizza toppings: ¼ c pre-cooked vegetables (peppers, onions, mushrooms, olives, pineapple, etc.) or 2 oz pre-cooked meat (turkey pepperoni, turkey sausage, lean ham, etc.). Note: these are not included in the listed nutrition facts.
Directions
- Preheat oven to 375 °F.
- If necessary, filet or pound chicken so it is flat and large, like a mini pizza crust.
- Cut chicken breast in half to make two personal “pizzas”.
- Line a baking sheet with foil (sprayed with nonstick pan spray) or parchment paper. Lay chicken flat on a baking sheet and sprinkle with basil and garlic. Bake in preheated oven until fully cooked (chicken reaches 165 °F interval temperature), about 20-35 minutes.
- Remove the baking sheet from the oven. Spread tomato sauce over the top of the chicken. Add toppings, if using. Top with mozzarella cheese.
- Return chicken to the oven to melt the cheese (about 3-5 minutes), then serve.
