Quick Whole Wheat Bread

Ingredients
  • 2 cups whole wheat flour
  • 1 cup bran
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt (optional)
  • 1¼ cups lowfat buttermilk
  • 1 tablespoon canola oil
Directions
  • Spray a muffin tin mold with nonstick cooking spray.
  • Preheat oven to 425°F.
  • In a large bowl, mix together the dry ingredients.
  • Make a well in the middle and pour in the buttermilk and oil. Mix quickly with a rubber scraper until flour disappears, folding dough with a kneading motion.
  • Shape into a round ball.
  • Shape 2 tablespoons of dough into a ball and place in a muffin tin. Repeat until all dough is used.
  • Bake for 18 minutes.
