Spanish Rice

Ingredients
  • 1 teaspoon olive oil
  • ½ cup white rice
  • ½ cup chopped onion
  • 1 garlic clove, minced
  • ¼ cup tomato sauce
  • 1 cup chicken broth
  • ½ teaspoon oregano
Directions
  • In a small saucepan, cook rice in oil over moderate heat for about 3 minutes. Add onion and garlic, stirring constantly for another minute or two.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat to low. Cover tightly and simmer for 15 minutes.
