St. Kitt’s Vegetable Salad

Ingredients

1 cup chopped tomatoes
1 banana, sliced
1 cup chopped asparagus
½ cup diced celery
¼ cup chopped red onion
1½ cup cooked rice
2 tablespoons reduced-fat sour cream

Directions
  1. Combine tomatoes, asparagus, onion, banana, celery, and rice.
  2. Toss mixture with sour cream.
  3. Serve or refrigerate.
