Watermelon and Chicken Salad with Chive Dressing

Ingredients
  • 1 1b chicken breast, cooked (or canned chicken, drained)
  • ½ cup diced watermelon
  • ½ cup diced cucumber
  • 4 cups spinach (or other lettuce)
  • ¼ cup chopped walnuts
  • Chive Dressing
  • 2 cloves garlic
  • 2 Tbsp lemon juice
  • 2 Tbsp oil
  • 1 tsp fresh minced chives
  • ¼ tsp salt
  • ¼ tsp ground black pepper
Directions
  1. Wash hands with soap and water.
  2. Wash all produce under cold water. Cut as described in Ingredients.
  3. To four plates, layer spinach, watermelon, cucumber, cooked chicken, and walnuts.
  4. Make Chive Dressing by adding all ingredients to a small blender or food processor. Process until smooth.
  5. Divide dressing evenly over salads and serve.
