1 lemon cake mix
½ cup oil
1 package of fat-free, sugar-free lemon pudding
1 cup water
4 eggs
¼ cup poppyseeds
Preheat oven to 350°F. Wash hands with soap and water.
Mix all ingredients together with a mixer at medium speed for four minutes.
Pour into 2-8 by 4-inch loaf pans, either nonstick or spraying with nonstick cooking spray.
Bake for 45 minutes or until done. Makes two loves or 32 slices.
To store cover with plastic wrap or foil and store for one to two days at room temperature or refrigerate for up to one week.
