Spinach & Artichoke Bites

Ingredients
  • 24 wonton wrappers  

  • 10 oz. frozen spinach, thawed and drained well  

  • 1 red pepper, washed and finely diced 

  • 1 (14 oz.) can artichoke hearts, drained and chopped  

  • 1 (8 oz.) package Neuchatel cheese, softened  

  • 1 cup nonfat plain Greek yogurt 

  • ½ cup parmesan cheese, grated 

  • ¼ cup mozzarella cheese   

  • 3 cloves garlic, minced  

Directions
  1. Preheat oven to 350°F. Wash hands with soap and water.  

  1. Place wonton wrappers in two muffin pans. Lightly spray wrappers with cooking spray. Bake for 4- 5 minutes. Set aside.  

  1. Combine cheese and yogurt in a large bowl.  

  1. Add drained spinach, red pepper, artichokes, and garlic.  

  1. Scoop spinach and cheese mixture into each wonton. Bake for 10 minutes. Enjoy!

Store in an airtight container and refrigerate for up to 4 days.
