3 cups old-fashioned oats
1 cup blueberries, washed
2 bananas, mashed
2 eggs
1 ½ cups low-fat milk
3 Tablespoons honey
1 Tablespoon vanilla extract
1 Tablespoon cinnamon
2 teaspoons baking powder
½ teaspoon salt
Preheat oven to 350°F. Wash hands with soap and water.
Coat the muffin tin with nonstick spray.
Combine oats, cinnamon, baking powder, and salt in a medium bowl.
Combine bananas, eggs, honey, vanilla, and milk in a separate bowl.
Mix the wet and dry ingredients together and carefully fold in the blueberries.
Divide the batter between the 12 muffin tins. Bake for 20-24 minutes until golden brown. Eat cold or warm.
Store in the refrigerator in a sealed container for up to four days or freeze.
