Blueberry Oatmeal Bites to Go

Ingredients
  • 3 cups old-fashioned oats 

  • 1 cup blueberries, washed 

  • 2 bananas, mashed 

  • 2 eggs 

  • 1 ½ cups low-fat milk 

  • 3 Tablespoons honey  

  • 1 Tablespoon vanilla extract 

  • 1 Tablespoon cinnamon 

  • 2 teaspoons baking powder 

  • ½ teaspoon salt 

Directions
  1. Preheat oven to 350°F. Wash hands with soap and water.  

  1. Coat the muffin tin with nonstick spray.  

  1. Combine oats, cinnamon, baking powder, and salt in a medium bowl.  

  1. Combine bananas, eggs, honey, vanilla, and milk in a separate bowl.  

  1. Mix the wet and dry ingredients together and carefully fold in the blueberries. 

  2. Divide the batter between the 12 muffin tins. Bake for 20-24 minutes until golden brown. Eat cold or warm.

 Store in the refrigerator in a sealed container for up to four days or freeze.
