Ingredients

1/4 cup packed cilantro leaves

1/4 cup lime juice

2 tsp apple cider vinegar

1/4 cup honey

1 clove garlic, sliced

2 Tbsp minced red onion

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 cup olive oil
Directions
- Wash hands with soap and water.
- Wash cilantro under cool water. Remove leaves and throw out stems. Measure to 1/4 cup.
- Combine all ingredients, except olive oil, in blender until slightly combined.
- With blender running, slowly add olive oil through opening in blender lid.
- Storage: Add dressing to food-safe container, cover, and refrigerate. Use within 7 days.
- Pairing: Add dressing to a salad of lettuce greens, corn, black beans, sliced tomatoes, sliced avocado, leftover cooked chicken, and cheddar cheese.
