Ingredients
- Half pound tomatillos (approximately 4 medium tomatillos)
- Half of one jalapeño
- 1 small onion (or one-quarter of large onion)
- 2 cloves of garlic
- 1 Tablespoon lime juice
- 1/4 cup fresh cilantro
- 1/4 tsp salt
Directions
- Wash hands with soap and water.
- Wash tomatillos, jalapeño, and cilantro.
- Prepare vegetables. Remove husks of tomatillos and cut in half. For jalapeño, remove stem, seeds, and ribs. Peel and quarter onion. Peel garlic cloves. Save cilantro leaves and discard stems.
- Turn on oven boiler to high.
- On a foil-lined baking sheet, add tomatillos cut side down, jalapeño cut side down, and onion pieces. Broil for 10 minutes. Expect vegetables to become charred – or black – on the outside.
- Add all ingredients to a food processor. Puree until smooth or pulse in short bursts for a chunkier texture.
- Serve immediately. Add leftovers to a food-safe container with a cover and refrigerate within 2 hours. Eat within 4 days or freeze for longer storage.
