Ingredients
- 1 – 14.5 ounce cannellini beans, no salt added – drained and rinsed
- 3 Roma tomatoes, seeded and diced
- 1/3 cup red onion, chopped
- ½ cup fresh basil leaves, chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- 1 garlic clove, minced
- ¼ teaspoon salt
Directions
- Wash hands with soap and water.
- In a small bowl, add vinegar, garlic, and salt. Slowly add olive oil while whisking the ingredients.
- In a larger bowl, combine beans, tomatoes, onion, and basil.
- Pour the oil and vinegar mixture over the bean mixture and stir to combine flavors.
Store in the refrigerator in a sealed container for 4 days.
