Paola Gordillo joined Illinois Extension as a SNAP-Ed Educator for Cook County in October 2023. Paola is passionate about increasing health equity and learning evidence-based practices to better serve communities on a larger scale.

Paola graduated with her Master of Science (2023) and Bachelor of Science (2021) in Food Science and Human Nutrition from University of Illinois Urbana-Champaign. Her current research focuses on improving cooking skills, reducing food waste, and promoting food resource management in SNAP-Ed households. Paola is also a registered dietitian and an active Academy of Nutrition and Dietetics member.
