Ingredients
- 1 15-oz can cooked chickpeas, drained and rinsed
- 1/4 cup quick oats
- 1/4 cup almond butter
- 1 Tbsp maple syrup
- 1 Tbsp vanilla extract
- 1/4 cup eggnog (dairy-based or dairy alternative)
- 1 tsp baking soda
Directions
- In a blender or in a food processor, combine all the ingredients except eggnog.
- Puree until the mixture is smooth, about 30-60 seconds, adding eggnog 1 Tbsp at a time to create the desired consistency.
- Taste and adjust seasonings as needed. Allow to sit in the refrigerator for 1 hour before serving with sliced apples, pears, vanilla wafers or graham crackers.
