Ingredients
  • 2 large eggs
  • 2/3 cup packed light brown sugar
  • 1 cup mashed ripe bananas ( 2 medium-sized)
  • 1 cup buttermilk
  • 1 cup unprocessed wheat bran
  • 1/3 cup canola oil
  • 1 tsp vanilla extract
  • 1 ¼ cup whole-wheat flour
  • ½ cup all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1/3 cup chopped walnuts
  • ½ cup dark chocolate chips (optional)
Directions
  1. Preheat oven to 4000F. Coat one muffin tin with a non-stick spray.
  2. Combine eggs and brown sugar into a medium bowl and whisk until smooth. Add bananas, buttermilk, wheat bran, oil, and vanilla into the same bowl and whisk together.
  3. In a separate large bowl, combine whole-wheat flour, all-purpose flour, baking powder, baking soda, cinnamon, and salt. Once mixed, create a well in the center of the dry ingredients. Add the wet ingredients slowly, folding in wet ingredients until all is combined. Lightly stir in chocolate chips if using at this point.
  4. Pour the batter into the muffin tin and fill almost to the top. Sprinkle chopped walnuts on batter before placing in oven.
  5. Bake the muffins until the tops are a golden brown and have good bounce back (15-25 minutes).
  6. Let the muffins cool in the pan for 5 minutes before removing. Loosen the edges of muffins and place muffins onto a wire rack to continue cooling for at least 5 minutes before serving.
