Edamame with Basil, Cranberry and Feta

Ingredients
  • 1 bag (10 oz.) frozen shelled edamame
  • ¼ cup fresh basil, cut into thin strips
  • ½ cup dried cranberries
  • 1 Tablespoon olive oil
  • ⅛ teaspoon black pepper
  • ½ cup feta cheese crumbles
Directions
  1. Cook edamame in microwave or over stovetop according to package directions.
  2. Set aside to cool.
  3. In a medium bowl, toss all ingredients together.
  4. Place in refrigerator and serve chilled.
