Grilled Vegetable Kabobs

Ingredients
  • 1 medium yellow squash
  • 1 red bell pepper
  • 1 medium zucchini                                                               
  • 8 ounce grape tomatoes                                                           
  • 8 ounce fresh mushrooms
  • ½ large red onion

Marinade

  • 1 large garlic clove, finely chopped                                
  • ¼ cup olive oil
  • ⅛ cup balsamic vinegar
  • ¼ teaspoon dried thyme                 
Directions
  1. If using wooden skewers, soak in water for 30 minutes prior to grilling to prevent charring.
  2. Preheat grill to medium-high heat.
  3. Wash all vegetables and cut squash, zucchini, pepper and onion into 2-inch chunks.
  4. Place vegetables in a large bowl and add tomatoes and mushrooms.
  5. In a small bowl, mix garlic, olive oil, vinegar and thyme.
  6. Drizzle over vegetables and toss to coat.
  7. Thread vegetables alternately on skewers.
  8. Grill kabobs 15-20 minutes, turning occasionally until tender.
