Origin of the Crepes:
Crepes are a type of very thin pancake and originated from France. While crepes originated in France, you can find crepes served in restaurants around the globe, and crepes often contain fruit and other fillings for breakfast, as well as meats and cheese when served as lunch and dinner.
Delicious Strawberry Crepes
Basic Dessert Crepes
Yield: 16-18 crepes
1-cup all-purpose flour
1-1/2 cups low-fat milk
2 eggs
2 T. sugar
1 T. butter, melted
Dash salt
- In a bowl, whisk milk, eggs and sugar and salt. In another bowl, measure flour, make a well and add wet ingredients. Whisk briskly until dry is incorporated with wet ingredients. Drizzle butter and mix.
- Heat a greased skillet or crepe pan.
- Spoon 3 T. batter, spread batter to a thin pancake consistency.
- Cook approximately 45-60 seconds, flip crepe. Continue cooking.
- Remove crepe, layer on a plate or cooling rack.

Strawberry Crepes
Yield: 8 servings
8 basic dessert crepes (recipe above)4-ounces low-fat cream cheese, softened
¼ cup plain low-fat Greek yogurt
2 cups fresh strawberries
4 strawberries for garnish
3 T. sugar (or sugar substitute)
4 T. low-fat whipped cream
2 T. Powdered sugar
To assemble:- Wash and hull strawberries, slice into a bowl and sprinkle with 2 T. sugar. Let sit until strawberries are at room temperature and sugar has dissolved.
- Prepare basic dessert crepe recipe.
- Whip cream cheese, yogurt and 1 T. sugar.
- Spread cream cheese mixture over the side of the crepe, browned side down. Leave ¼-inch rim around edge of crepe.
- Line middle of crepe with strawberry slices.
- Roll the crepe, place on serving dish.
- Garnish with a strawberry (cut into a fan shape) with a dollop of whipped cream. Sprinkle with powdered sugar.
