Cabbage Roll Soup

Ingredients
  • 1 lb. lean ground beef
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 3 cloves garlic, chopped
  • 4 cups beef bone broth or low sodium stock
  • 1 (28 ounce) can diced tomatoes
  • 2 Tablespoons tomato paste
  • 4 cups green cabbage, coarsely chopped
  • 1/2 cup long grained brown rice
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/4 teaspoon thyme
  • 2 bay leaves
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon Worcestershire sauce
Directions
  1. In a large stewpot, brown ground beef with onion and carrots; drain grease.
  2. Add garlic; cook 1 minute.
  3. Stir in remaining ingredients.
  4. Bring to a boil, reduce heat, cover and simmer 45 minutes or until rice is tender.
  5. Remove bay leaves and serve.
