Ingredients
- 1 lb. lean ground beef
- 1 cup onion, diced
- 1 cup carrots, diced
- 3 cloves garlic, chopped
- 4 cups beef bone broth or low sodium stock
- 1 (28 ounce) can diced tomatoes
- 2 Tablespoons tomato paste
- 4 cups green cabbage, coarsely chopped
- 1/2 cup long grained brown rice
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/4 teaspoon thyme
- 2 bay leaves
- 1 Tablespoon balsamic vinegar
- 1 Tablespoon Worcestershire sauce
Directions
- In a large stewpot, brown ground beef with onion and carrots; drain grease.
- Add garlic; cook 1 minute.
- Stir in remaining ingredients.
- Bring to a boil, reduce heat, cover and simmer 45 minutes or until rice is tender.
- Remove bay leaves and serve.
