German Sauerkraut Salad

Ingredients
  • 2 cups sauerkraut
  • 1 cup chopped celery
  • 1 cup chopped red bell pepper
  • ½ cup shredded carrots
  • ⅓ cup chopped sweet onion
  • 1 apple, cored and diced
  • ⅓ cup olive oil
  • ¼ cup sugar
  • ¼ teaspoon black pepper
Directions
  1. Drain sauerkraut in a sieve over a bowl.
  2. Measure about ½ cup of liquid and reserve.
  3. Stir in celery, red pepper, carrots, onion and apple with the sauerkraut.
  4. In a separate bowl, whisk reserved drained sauerkraut liquid, olive oil, sugar and pepper.
  5. Pour over vegetables and stir.
  6. Let salad sit in the refrigerator for several hours or overnight before serving.
