Ingredients
- 2 cups sauerkraut
- 1 cup chopped celery
- 1 cup chopped red bell pepper
- ½ cup shredded carrots
- ⅓ cup chopped sweet onion
- 1 apple, cored and diced
- ⅓ cup olive oil
- ¼ cup sugar
- ¼ teaspoon black pepper
Directions
- Drain sauerkraut in a sieve over a bowl.
- Measure about ½ cup of liquid and reserve.
- Stir in celery, red pepper, carrots, onion and apple with the sauerkraut.
- In a separate bowl, whisk reserved drained sauerkraut liquid, olive oil, sugar and pepper.
- Pour over vegetables and stir.
- Let salad sit in the refrigerator for several hours or overnight before serving.
